Mr. G. S. DE SOUZA - CEO (R) and Dean of Academy Shri KESHAV NADKARNI (L) International Cruises Culinary Academy Pvt. Ltd., project is the brainchild of Mr. G. S. DE SOUZA - CEO, who is a specialist in the field of Security, Safety and Hospitality industry, includes twenty five years in management position with major Airports, Airlines, Hotels and Cruise Lines.

Ably supported by an efficient team of faculty with long experience on cruise liners and hospitality industry headed by Dean of Academy Shri KESHAV NADKARNI, H.C.M.T., M.H.C.I.M.A., who has excelled in the field of hospitality and has carved a niche for himself.

Historically, ship management had been largely limited to commercial cargo operations, however, with mega - mergers and consolidations within the passenger ship industry, more cruise companies are entrusting their operations to management companies.

We, at the International Cruises Culinary Academy Pvt. Ltd, are proud to be the first recognised academy in Goa, to introduce "Culinary Arts and Crafts"

A lot has happened since the cruising era, where "Passenger's" that took a cruise, were considered to be "elite", receiving amenities and service of top standards throughout their cruise.

Today, cruise companies cater to the whole world, regardless of the prices paid for staterooms.

Without a word of doubt, the demand for the cruise industry has grown because today's cruiser is looking to have a "once in a life time" cruise experience as well as get their "value for money".

Today, we call them "OUR GUESTS".

This is where again, the I.C.C.A. plays a major role in making sure that our ships have trained and experienced "CULINARY CREW".

"Safety of Life at Sea"
It is our responsibility to make sure that our culinary team is not just trained in Cookery & Culinary Art, but are able to handle any emergency situations.

We believe in emphasise that they are first "Sailor's" and they represent their various areas, in the "Culinary Department".

"Safety is Everybody's Business"
Food safety, quality, management and procedures have an important part to play in making sure that our guests, officers, staff and crew receive top quality & nutritious food as per the international rules and regulations.

Along with it's experienced culinary management, our academy aims to train and produce the finest chefs found fit to operate on any cruise liner.

This, the "Opening Semester", the I.C.C.A. is proud to interview, hire and train almost a hundred "Culinary Crew" within a period of six months.

These crew will be divided into all categories, at the time of their interviews, and placed in specific areas covering the galley.

They will be physically trained to comply with international public health, safety & security standards.

Topics covered, will be:
Personal hygiene
All our crew will be trained to comply with general public health rules. As well as briefed on general requirements.

Galley etiquette
Compliance of dealing with service staff as well as with utilities will be part of our classes.

Temperature monitoring and recording of each area relating to food production and storage.
Each area will be inspected for temperature. All chefs and cooks will be supplied with pocket thermometers.

Sanitation
All chemicals are in place for sanitation purposes. Rules and regulations of maintaining galley equipment, as well as reporting any faulty equipment.

Calculation of points deducted during a simulated as well as regular public health inspection.

Dignitary international "Visiting Chefs" will participate to further train, assist and supervise our culinary arts division from time to time.

Briefings and presentations on the "Master's Rules and Regulations". The Do's and Don’ts that "will" help in their job safe & secure. Mandatory duties and drills required by the international cruise industry to be performed, regardless of rank and position. Basic elementary First Aid, Fire Fighting and Prevention, Passenger Ship Familiarisation, Personal Safety and Social Responsibilities, Crowd Management. These courses will be conducted by recognised fire and safety institutions.

Handling and identifying of various chemicals and cleaning supplies.

Identifying "Emergency Exits". This is a very important factor that relates to an emergency situation on any cruise ship. We will explain in details during our training sessions.

Locating at least two ways of finding their place of work. Once again, incase of an emergency we need to brief you on how you can find your place of work or accommodations.

Cruise liners today, carry approximately 30 to 40 nationalities. This includes both guests and crew. It is our task and pleasure to train each division to cater to these nationalities, using a vast international menu.
