Join the cruise line directly after completion of six months Culinary Skills from Asst. Cook, 1st Cook, DCDP/CDP, Chef Tournant. ICCA at Goa has been affiliated HRDF ICCA is the "state of the art" training kitchen facility for "Culinary Arts" to teach and train in international cookery. The main courses at ICCA are delivered under the quality training frame work of HRDF.
 Personal Development Planning
PDP is a structured process to enable our crew to take control and reflect upon their learning, performance and achievements. This may sound like a lot of hard work but in fact, it is simply an organized way of getting the most out of your time at the academy.
There will be:
Links to the crew record system.
Records and store evidence, thoughts and plans.
Communicate with program team.
Check examination results.
Build multiple CV's
Maintain a personal journey / diary.
As you progress through the academy. The PDP system will enable you to collect Records of all those experiences and achievements, which you have contributed to your development. It will provide a resource of experience to draw on as you apply for placement as well as promotional opportunities.

Business
Many culinary specialists are successful chefs. They have combined culinary and self starting skills to open various new ships in the making and becoming a part of the opening team for the galley.

Pantry - gardemanger
Pastry
Bakery
Butchery
Roast
Sauce
Vegetable /Pasta
Fish
Buffet decorators fruit and vegetable carving, butter sculptures, ice carving.
The academy will teach both practical as well as theories on the various public health courses that are required on the international cruise lines.
